Arroz Doce Recipe

Sweet & Creamy: The Perfect Arroz Doce by Louro

INGREDIENTS

•⁠  ⁠1/2L of water
•⁠  ⁠150g Ilha Azul - Salted Butter
•⁠  ⁠1 Cinnamon stick
•⁠  ⁠Rind of 1 lemon
•⁠  ⁠9 Tablespoons of sugar
•⁠  ⁠1L Nova Açores Semi-Skimmed Milk (hot)
•⁠  ⁠200g Louro Rice 
•⁠  ⁠6 Yolks
•⁠  ⁠Cinnamon powder to taste
•⁠  ⁠1 Pinch of salt

PREPARATION

  1. Heat a pan with the water, salt, lemon zest, butter and cinnamon stick. When the melt, pour in the rice and boil until all the water is absorbed.
  2. ⁠Then pour in the milk. Keep boiling until the rice is well cooked but still whole. Add the sugar, mix well and boil for another 5 minutes. Remove the lemon zest and cinnamon stick.
  3. ⁠Break the eggs and beat the yolks in a bowl, adding spoonful’s of rice and stirring well so that the eggs don't crumble.
  4. ⁠Pour the mixture into a saucepan and heat over a low heat so that the eggs thicken. Don't let it come to the boil so it doesn't curdle, taking care to stir all the time.
  5. ⁠Pour into a serving dish, sprinkle with cinnamon and serve cold.
